- ½ pound thick-cut bacon
- 2½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- ¼ teaspoon baking powder
- ½ cup unsalted butter, at room temperature
- ½ cup Bacon Up
- ¾ cup sugar
- ¾ cup packed brown sugar
- 3 tablespoons bourbon
- 1 teaspoon vanilla extract
- 2 eggs
- 10 ounces chocolate chips (dark recommended)
- Preheat oven to 400 degrees. Bake bacon for 15-20 minutes on parchment-lined cookie sheet. Drain on paper towels, cool and crumble into small pieces and set aside.
- Reduce oven temperature to 375 degrees. Line two baking sheets with parchment paper.
- Combine flour, baking soda, salt and baking powder in a medium bowl and set aside.
- In a mixing bowl, cream butter, Bacon Up and sugars until light and fluffy. Add bourbon, vanilla and eggs and continue to beat until thoroughly blended.
- Gradually add flour mixture on low speed. Stir in crumbled bacon and chocolate chips.
- Scoop rounded tablespoons of dough and drop onto baking sheet, placing 2 inches apart. Bake 9-12 minutes, until lightly browned...Full Recipes
Recipe called for a pound of fried bacon, which we reduced to ½ pound. We also added chopped pecans. We made larger cookies, which yielded about 3 dozen.
