Recipe: Bourbon Chocolate Chip Cookies with bacon grease


#Recipe: #Bourbon #Chocolate #Chip #Cookies #with #bacon #grease
  • ½ pound thick-cut bacon
  • 2½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup unsalted butter, at room temperature
  • ½ cup Bacon Up
  • ¾ cup sugar
  • ¾ cup packed brown sugar
  • 3 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 10 ounces chocolate chips (dark recommended)
Instructions:
  1. Preheat oven to 400 degrees. Bake bacon for 15-20 minutes on parchment-lined cookie sheet. Drain on paper towels, cool and crumble into small pieces and set aside.
  2. Reduce oven temperature to 375 degrees. Line two baking sheets with parchment paper.
  3. Combine flour, baking soda, salt and baking powder in a medium bowl and set aside.
  4. In a mixing bowl, cream butter, Bacon Up and sugars until light and fluffy. Add bourbon, vanilla and eggs and continue to beat until thoroughly blended.
  5. Gradually add flour mixture on low speed. Stir in crumbled bacon and chocolate chips.
  6. Scoop rounded tablespoons of dough and drop onto baking sheet, placing 2 inches apart. Bake 9-12 minutes, until lightly browned...Full Recipes
Note: 

Recipe called for a pound of fried bacon, which we reduced to ½ pound. We also added chopped pecans. We made larger cookies, which yielded about 3 dozen.
